I completely hijacked this idea from my good friend, Jaime Almond, when she told me she had a hankering for some maple walnut fudge. With all of the experimenting I’ve been doing with raw vegan desserts, the plan for fudge seemed very clear to me. The key to Raw Vegan Fudge? Definitely coconut butter. The texture is perfect!
Raw Vegan Maple Walnut Fudge Recipe
- Coconut Butter
- maple syrup
- a few dates
- dash of maple extract
- dash of vanilla extract
- pinch of sea salt
- a few walnut pieces thrown in at the end for texture
I didn’t measure out my ingredients exactly, but I started out with equal parts walnuts and conut butter and from there it was a matter of trial and error. Into the food processor with the basic ingredients, then shuffle around for taste and texture. Then I pressed this into a container and chilled it in the freezer. Absolutely delicious!
